Muffin recipe

Makes 6 muffins

60g butter

5 tb sp cane sugar

2 egg

230g self rising flour

Pinch salt

1t sp baking power

1 t sp vanilla essence

5 tb sp skimmed milk

100g chopped abricots and 100g dried strawberries

ingredient

Whisk eggs, dissolve butter on the oven and combine all ingredients in a large bowl.

Spoon into 6 non stick bun tins.

Preheat oven and bake at 190C/375F/ gas mark 5 for 25 mins.

Variations – 200g fresh blueberries, 2 mashed bananas, 200g raisins or 200g any chocolate
